You'll need an effects unit that has that effect. It won't sound exactly like a sitar but you can come close.

Danelectro has a pedal to do just that. Checkout http://www.danelectro.com it's a cool pedal but it is pretty much a one trick pony. The Boss GT-6 through GT-8 multieffects pedals also have a sitar model in them. Check them out at http://www.bossus.com

Digitech makes one called based on Disturb's guitarist. http://www.digitech.com/products/weapon.htm

Also, the Roland guitar synth has many sitar/middle eastern sounds. http://www.rolandus.com/products/productdetails.aspx?ObjectId=592&ParentId=53

Pedals are probably the best way to go, but playing technique can also give you the slight sound of a sitar. Start with picking; pick the string quite sharp/hard, when sustaining a note, use VERY LIGHT vibrato.

Now, I'm not sure, but I think that a sitar uses quarter-tones as apposed to semi-tones (example, a quarter tone would be somewhere in the middle between C# and D), so the 'frets' of a sitar are like C - slightly above C - C# - slightly above C# - D etc. You can get this by adding a slight bend to the string.
