I am a newly registered member from Sweden.

The Hagstrom ultralux XL-5 is equipped with three pickups in a H/S/H setup and comes with a 5 way selector siwtch (and a toggle to make the Hs into Ss).

What is the configuration of the 5way switch? and,

Does anyone here know if it is possible to use a combination of the two Humbuckers only, i.e. while not using the Single Coil in the middle?

Well, I might have found the answer myself (though I am still waiting for an answer from Hagstrom Guitars in the US).

There is a similar guitar from Gibson, i.e. MIII which also has the H/S/H combination, 5switch selector and Coil toggle switch.

Disregard the previous post referring to the Gibson MIII, the XL-5 does not use the same wiring.

Anyway,after trying out the XL-5 I can conclude that it is not possible to use it in H/-/H combination.
The 5 way switch acts as a normal switch for three pups and
The coil tap either use the humbuckers as humbuckers or as single coils, so:

Neck only, H/-/- or S/-/- (depending on coil tap)
neck and middle, H/S/- or S/S/-
middle, -/S/- or -/S/- (yes the same)
middle and bridge, -/S/H or -/S/S
bridge only. -/-/H or -/-/S

The guitar is really really nice and versatile with Jumbo frets and the ultrafast neck. It would have been nice to be able to use the H/-/H combination though...
