Does it influence the tone? I'm talking about strats necks, either maple or rosewood. Is there a diference

Yes it does
Just remember: Maple Neck, bright good on the highs, less mid and low range tones
Rosewood, richer tone, deeper on mids, and lows and balanced highs

Oh yes... Maple makes sound much brighter... I think it's good in mahogany guitars - they have a lot of low freq and sometimes it too much... Alder or ash strats sound better to me witch rosewood fretboard

Maple gives bright tone. Rosewood has more low and mid freq. What do you prefer?? Maple fretboard is really good in funky, reggea, ska...

i've only every played guitars with rosewood fretboards. it's a part of my sound.
to me a significant difference is the way it plays, as well.

It's hard to tell the difference unless you have the same guitar with different fretboards. A good way to tell would be to sit down with a couple of the Epiphone Zakk Wylde models. The Camo has a maple board, the rest have ebony boards. You could probably find another guitar in the same store with the same pu's and sound but with a rosewood board too.
